What makes sliced apple turn brown?

It’s the plant trying to seal and disinfect the wound. The colour comes from melanins, the same thing that darkens our skin. When plant cells are ruptured, various phenolic compounds in the cell encounter an enzyme called polyphenol oxidase. That oxidises them into quinones, which themselves combine to make antimicrobial melanin barriers.
