How fast do you need to go to stop a speed camera photographing your plates?

Suppose that the camera’s image covers a 20m stretch of road. You’d have to be driving fast enough to clear that distance in the time between the first and second photographs. This interval is typically 0.5 seconds.
To travel 20m in 0.5 seconds, your speed would have to be 144km/h (90mph). But even if you floored it and escaped that second photo, the authorities would know you were definitely speeding, so you’d still get caught. Don’t try it.
